Leaf thinning of the fruit zone on the eastern side (morning sun), in order to increase the contact with sunlight and to benefit the full ripening of the fruit. In the case of Finca Diamante, we can also leaf pull on the West side because the vineyard is located in a higher altitude (colder), specially the Cabernet Sauvignon that has a longer ripening period. Most of the leaf pulling is done in the month of December, when the grape is still green, that is, at the end of the fruit set. The cluster stays really exposed.
